Question What is a good (beef) vegetable soup recipe?
My fiancee is very picky with his food so I am hesitate to make meals for him other than the basic stuff. Now that I have a week off from school I want to make him some good home-cooked meals. He likes vegetable soup but with beef, not chicken. Anyone have a good recipe for vegetable soup that I can make from scratch (but hopefully not too difficult)? I do not have a slow cooker or a huge soup pan. thanks for any ideas!
Best Answer I have one for a Southern style vegetable beef soup that I use all the time. It's not difficult, though the recipe looks like it might be... 2 lbs beef (I use sirloin tips because they cook up so well) 1 med yellow onion 1 lg pepper 2 stalks celery 6 carrots 3 lg Yukon Gold potatoes 1/2 lb okra (optional) 1/2 lb green beans 3 sm yellow squash 1 med zucchini 1 can sweet corn (I cheat, I hate cobbing corn) 3 tomatoes (peeled, seeded and chopped) or 1 can diced tomatoes 2 cubes beef bullion Seasonings; pepper, salt, parsley, crushed red pepper or chili powder, celery seed (if not using celery) First, prepare your vegetables. They should all be cut bite sized. Set aside. Put 1 tbsp oil or butter into pan and brown beef on low heat with onions and peppers. When browned, add a cup of water, cap the pan and simmer to release all the beef juices. When the water is mostly gone, add 6 cups of water, your vegetables, seasonings, 2 cubes beef bullion and simmer with lid on until carrots are tender. Seasonings are all done to taste, and you'll need to check it often, stirring and tasting to see if you need seasoning. If you use canned tomatoes, put the liquid in the can in there too. You may need to add water as it cooks, also.

I am after a hearty beef and vegetable soup recipe that DOES NOT HAVE pearl barley or other dried seeds /peas in it. Pasta is OK. Thanking you in advance If you don't have recipe don't bother to answer because I'll just report you for wasting my time.
Best Answer take one large beef bone, and bake it for 2 hours at 300 f put it in a large pot (about 8 quarts) and cover it with water. add1 onion and 2 cloves garlic. simmer for about 2 hours then remove and take the meat off the bone. Throw the bone out and put the meat back into the pot. add 1 cup each,sliced carrots, peas, corn , 2 cups diced potatoes,and 1 28 oz can of diced tomatoes.simmer for about another half hour. salt and pepper to taste. and you have a good thick soup. you can also add 1 cup rice or 1 cup shell noodles.
